Cookie’s community activism and leadership were evident as her involvement in the founding of the Parrish Foundation as a board member and officer (Secretary) of the board of directors.  The Parrish Foundation was created to over see the board’s asset of the “Old Parrish School House” located on US 301 N. The Parrish Foundation’s board mission is to provide a funding source, be able to provide monetary grants to small local not for profit groups and organizations.  Cookie was instrumental in establishing the Parrish Foundation’s grant program and chaired the annual grant application committee, to the evaluation and awarding of grants with the help of a few Parrish Foundation’s board members serving on this committee.
In order to fund these grants, a fundraising event(s) was established and developed. The Parrish Foundation’s board including Cookie’s advise and guidance, created the Parrish Chili Off event held each year in March.
